81.  Drain into a wire sieve and rinse well under cold running water to remove salt.

82.  Drain the greens in a sieve and chill under cold running water.

83.  Drain the noodles in a colander, and rinse under cold running water to remove the starch.

84.  Drain the pasta and rinse under cold running water until thoroughly cool, then drain again.

85.  Drain, rinse under cold running water and spread on paper towels to dry.

86.  Drain and cool under cold running water, then drain again.

87.  Drain and cool under cold running water.

88.  Drain and refresh immediately under cold running water.

89.  Drain immediately, rinse individually under cold running water, and lay flat on paper towels to dry.

90.  Drain in a colander, rinse under cool running water, drain again, and set aside.
