21. Blanch spinach in heavily salted water.
22. Blanch the green or yellow beans in a large pot of boiling salted water until just tender.
23. Boil fresh greens in a large pot of salted water until almost tender.

26. Boil the green beans and wax beans in salted water until tender.
27. Boil diced potatoes in salted water until just tender.
28. Boil in salted water until crisp-tender, drain and rinse them in cold water.
29. Boiling potatoes in salted water adds some flavor to the spuds, but tends to turn the skins an anemic gray color.
30. Boil them in salted water until tender, about half an hour, then chill.
