1.   Beat in the eggs, vanilla extract and vanilla seeds.

2.   In a small bowl combine the eggs, eau-de-vie, milk, vanilla seeds and the reserved melted butter and mix well.

3.   Place the cream, milk, vanilla seeds and pod and cinnamon sticks, if using, in a medium saucepan and bring to a boil.

4.   Scrape vanilla seeds into pan and add vanilla bean and ginger.

5.   Sprinkle a little cluster of vanilla seeds from remaining beans.

6.   Stir in vanilla seeds and salt to taste.

7.   Sprinkle rose water on your hands and smear the vanilla seeds into one palm.

8.   Whisk in egg yolks and half the vanilla seeds.

9.   With the tip of a knife, scrape the vanilla seeds into the pan or add vanilla extract.

10.   With a sharp knife, scrape the vanilla seeds from the bean into the bowl.
