1.   If desired, serve accompanied by mashed potatoes.

2.   Serve accompanied by the remaining diced tomato, diced onion, minced jalapeno and chopped cilantro, or scatter them over the chickpeas.

3.   Serve accompanied with tortilla chips.

4.   Transfer the chicken to a heated serving platter or heated dinner plates, and serve accompanied with the reserved sauce.
