1.   Cooked pasta should not have the texture of extruded mashed potatoes.

2.   Dried pastas have consistent flavor and texture.

3.   Pearl pasta has a very appealing texture, but if you cannot find it use some other small pasta like orzo.

4.   The brass creates more friction than modern Teflon devices, so the pasta has a rough texture, the better to grab the sauce.
