1. Mash vegetables and serve with dumplings. 2. Simmer over low heat, stirring occasionally and mashing vegetables with a fork until liquid begins to evaporate. 3. Using a potato masher or the back of a large spoon, partially mash vegetables in pot, making sure to leave some larger pieces. 4. With a wooden spoon or ladle, mash the vegetables in a sieve and force as much of them as possible through the sieve. 5. You can mash the vegetables if you want the soup coarse, or put the soup through a blender or food processor if you want it completely smooth. |
