1.   The following recipe is a good all-purpose chestnut puree.

2.   At Jean Georges, Jean-Georges Vongerichten has a soup floating with ravioli filled with chestnut puree.

3.   Chestnut puree, sold plain and sweetened, can be used for smooth soups, vegetable purees, baked goods and desserts.

4.   If you are using prepared chestnut puree, set aside.

5.   In two-quart sauce pan mash chestnut puree with a fork.

6.   Instead of mashed potatoes, try a chestnut puree with a dash of Calvados, or sweet potatoes with ginger.

7.   Those same candy shops all sell sweetened chestnut puree in tubes the size of toothpaste for a Dopp kit.
