1.   As the story opens, the butcher has already done prison time for assaulting a man who he mistakenly believed had raped his daughter.

2.   As with all cutlet preparations, these are lightning quick, especially if you get most of the work done by the butcher.

3.   Butchers are doing without the usual coating of cornstarch that keeps the plastic wrap from sticking to meat.

4.   If butcher has not already done so, trim lamb of excess fat.

5.   Remove it or have the butcher do it for you.

6.   Pilgrims have the choice whether to carry out the sacrifice themselves or allow the butchers to do it for them.
