51.   If you cover the pot with a regular lid, the steam that is released from the food recirculates into the sauce or braising liquid, and dilutes it.

52.   Partially cover pot and bring to a simmer.

53.   Place the meat balls over the cabbage and cover the pot.

54.   Pour the beer and the cream over the mussels and cover the pot tightly.

55.   Quickly cover the pot again.
