41.   On the left is a large empty metal platter with a calligraphic twist of lemon peel balanced on its rim, the silver conch placed behind the plate.

42.   One uses lemon cake mix while others rely on lemonade, lemon peel, lemon extract or lemon juice for the lemon flavor.

43.   Over a large mixing bowl, pass ricotta cheese, orange peel, lemon peel and powdered sugar through a fine sieve.

44.   Place tuna mixture in a bowl and add lemon peel, lemon juice and Cognac.
