31.   Place fish in a greased grill basket, tucking under any thin edges.

32.   Place fish on a warm serving platter and garnish with scallions and cilantro leaves.

33.   Place fish, skin side up, over sauce.

34.   Place grilled fish on a clean platter, not the platter that held the uncooked fish.

35.   Place the fish on a flat baking pan sprayed with nonstick cooking spray and brush the fish lightly with oil.
