31. Remove from heat, and strain through a fine sieve into a bowl. 32. Press ricotta through a fine sieve or strainer or puree in a food processor fitted with metal blade. 33. Press the marinade through a fine sieve set over a bowl. 34. Press through a fine sieve into bowl. 35. Remove from heat and strain sauce through a fine sieve into a clean saucepan. 36. Remove from heat, and strain custard through fine sieve. 37. Remove from the heat and strain through a fine sieve into a glass or ceramic container. 38. Remove from the heat, and strain through a fine sieve into a bowl. 39. Puree the almonds and water in a blender and strain through a fine sieve. 40. Put the puree in a fine meshed sieve set over a bowl, and press through with the back of a spoon, pressing to extract the liquid. |
