11.   Boil this liquid until reduced slightly, then turn heat to low and return chicken to the pan.

12.   Add garlic and thyme sprigs if desired, and turn the heat to medium-high.

13.   Add the onions and a liberal sprinkling of salt and pepper, cover the skillet, and turn the heat to medium.

14.   Add the spinach and turn the heat down to medium.

15.   Add tomatoes, and turn heat to medium-high.

16.   Add broth, turn up heat, and bring to a boil.

17.   Add chicken, skin side down, and turn heat to medium.

18.   Add broth or cider and turn heat to low.

19.   Add remaining ingredients and turn heat to high.

20.   Add the tablespoon of olive oil, then mushrooms and shallots, and turn heat to high.
