12.   Keep blotting with towels to wick up remaining liquid.

13.   Massage chickens thoroughly, inside and out, with the remaining liquid, working it as far as possible under the skin without tearing the skin.

14.   Pour mangoes and remaining liquid into a blender.

15.   Pour remaining yellow liquid into a cup, leaving the milky solids behind in the pan.

16.   Pour remaining liquid over meat until the steak is completely covered.

17.   Remove the lid of the skillet, turn the heat to high and cook away any remaining liquid.

18.   Return pot to stove, and taste remaining cooking liquid.

19.   Squeeze to remove remaining liquid.

20.   Strain off any remaining liquid, and reserve.
