11.   Starting at the tip of the breastbone, loosen the skin from the breasts of the chickens, being careful not to tear the skin.

12.   The steam will loosen the skin.

13.   Turn until all sides are blackened, then place in a bowl and cover until steam loosens the skin.

14.   Transfer the hot nuts to a clean dishtowel and rub them with the towel to loosen the skins.

15.   Using your fingers, loosen the skins of the ducks over the breastbones, legs and thighs.

16.   With fingers, loosen skin from breasts of birds, starting at tip of breastbone and being careful not to tear skin.

17.   Work your hand back and forth, loosening the skin over the breast, legs and thighs.
