11. Once a languishing region, the South and its cities are spreading faster than lard on a hot skillet. 12. Or one side can be charred briefly in a hot skillet. 13. Over coals or in a hot skillet, cooking time will be five minutes or less. 14. Place the seasoned root vegetables into the hot skillet. 15. Place the fillets, skin side down, in the hot skillet, and immediately weight them down with another smaller skillet, or flatten them with a spatula. 16. Pour into hot skillet. 17. Put the bacon in a hot large skillet and fry until it is crisp cooked. 18. Place chops in hot skillet and cook, turning occasionally, until evenly browned and just done. 19.
