1. Drain into a wire sieve and rinse well under cold running water to remove salt. 2. Pour the rice into a large tightly woven wire sieve and rinse it under cold running water until the water running from it is clear. 3. Pour into a wire sieve placed over a bowl and drain well. 4. Strain the sauce through a wire mesh sieve, pressing with the back of a wooden spoon to extract all the flavorful liquid. 5. While tossing nuts, sift spice mixture through a fine-meshed wire sieve over them. |
