1.   Add the white wine, turn the heat to high, and cook until the wine nearly evaporates.

2.   Add the Madeira or port and cook until the wine evaporates.

3.   Add white wine, increase heat to medium-high and cook until wine evaporates.

4.   Christian Brothers brandy survives, but its wines have greatly evaporated.

5.   Simmer, stirring, until wine has evaporated.

6.   Simmer, uncovered, until the wine has evaporated.

7.   When the meat is done, the wine should have evaporated.
