1.   Cut the peppers lengthwise into quarters and remove the seeds and white membranes.

2.   Drop the seeds into a measuring cup, and pick off any white membrane clinging to them.

3.   It looked like the end of a wand you wave to create soap bubbles, especially since a transparent white membrane stretched from edge to edge.

4.   Put the pieces into the cold water and, using your fingers, break and pull the white membrane apart from the seeds.

5.   The enzymes loosen the white membrane and icky, thready stuff on the fruit.

6.   Using a sharp knife, cut peel and all white membrane from orange.

7.   With a small, sharp knife cut between the segment-dividing white membranes, releasing perfect little segments.
