1. Add any meat juices and whisk to combine. 2. Add both flours, salt and baking powder, and gently whisk to combine. 3. Add mirin, honey and rice vinegar, whisking to combine. 4. Combine vinegar, oil, dill and mustard seeds in a large bowl and whisk to combine. 5. Gradually pour half the hot liquid over the yolks, whisking to combine. 6. Immediately scrape the tempered egg mixture into the hot milk, whisking to combine. 7. Place the flour, salt and baking powder in a medium bowl and whisk to combine. 8. Pour the boiling cream into the beaten egg yolks and whisk to combine. 9. Place the egg whites, sugar, cream of tartar and salt in a large bowl and whisk to combine. 10. Shake or whisk to combine. |
