1.   Add the zucchini and peppers to the onion and continue cooking over medium heat until vegetables soften.

2.   Add the onion, tomatoes and curry leaves or cilantro, and cook, stirring, over medium heat until the vegetables soften.

3.   Continue cooking until vegetables have softened.

4.   Continue to cook, sauteing, until vegetables soften but do not become limp.

5.   Cook until vegetables have softened.

6.   When vegetables have softened, stir in the tomatoes and season.

7.   When vegetables have softened, push to the side, and brown meat quickly all over.
