1. In a large bowl, toss onions with olive oil to coat. 2. In a bowl toss the onion with a generous sprinkling of salt. 3. In a large bowl toss onions with oil and salt and pepper to taste. 4. Now toss the onion, in chunks, into the processor along with the garlic and chilies. 5. Toss the onions with the sugar and salt and continue to cook over low heat. 6. Toss the onions into the pan, adding more oil if needed. 7. Toss the onion to separate the slices and mound them all loosely in the center of the platter. |
