1.   Sprinkle toasted pine nuts over eggplants.

2.   Evenly sprinkle toasted crumbs over top.

3.   If desired, sprinkle toasted peanuts on top before serving.

4.   Sprinkle with remaining toasted nuts.

5.   Sprinkle toasted sides with thyme.
