1. Cool mixture by setting bowl into a bowl of ice water. 2. Garnish with cucumber slices, and set bowl on a bed of cracked ice. 3. Lay a kitchen towel across the bowl and set the bowl on the counter, out of the way, for an hour or so. 4. Set bowl of an electric mixer over a saucepan of simmering water, add chocolate chips and stir until melted. 5. Set bowl of egg whites directly in hot water. 6. Set the bowl in a larger bowl of ice water and beat on high speed until the filling holds a shape. 7. Set bowl of tomato water aside. 8. Set the bowl aside to cool slightly. 9. Set bowl atop a saucepan of simmering water. 10. Strain cream into small bowl, set bowl into ice bath, add cold water and, stirring frequently, cool completely. |
