1. Change mixer speed to low. 2. Change mixer speed to medium. 3. If at this point the cream has not yet started to boil, adjust the mixer speed to low and continue to mix until it does boil. 4. Increase mixer speed to high and add vanilla, cinnamon and butter, scraping bowl as necessary. 5. Increase mixer speed to medium-high and make an Italian meringue by pouring the hot sugar down the side of the mixing bowl into the whipping whites. 6. Increase the mixer speed to high and beat until the whites hold firm peaks. 7. Reduce mixer speed to low and slowly add the heated milk. 8. Reduce mixer speed to low. 9. Reduce mixer speed to medium and slowly add the sugar, a couple tablespoons at a time. 10. Reduce mixer speed to low and blend in the vanilla. |
