1. If you want a more authentic dressing, mash a couple anchovies with the salt and pepper before adding the spices to the dressing. 2. Mash the anchovies to make a paste, then stir in the remaining oil. 3. Using a fork, mash the anchovies in a small bowl. 4. Using a mortar and pestle, mash the anchovy, garlic and lemon zest until it reaches a pastelike consistency. 5. You mash the anchovies really good, to a paste. |
