1. Roast chicken emerges with a crisp mahogany brown skin and tender, juicy meat. 2. Admittedly, the microwave will not produce deliciously crisp skin on a baked potato. 3. All I wanted was a succulent chicken covered in a very crisp skin with a layer of herbs underneath. 4. Even birds that ordinarily sacrifice moistness for a crisp skin are succulent and deeply flavored. 5. If you coat chicken before cooking, you simply cannot get a crisp skin. 6. Lard paysan, poached pork belly, was fabulous with its crisp skin, caramelized potatoes and salad of tiny, fragrant herbs. 7. Serve sauce over chicken, or, for crisp skin, in a sauce boat. 8. That method steams the potato, giving it a moister texture and no crisp skin. 9. The bone adds considerable flavor, and the crisp skin is our favorite part of the meal. 10. The results were excellent, with the lush, tender and flavorful dark meat rimmed with crisp skin, but with relatively little fat on the bird. |
