1.   Add the olive oil, salt and pepper, and toss well to coat the vegetables with oil.

2.   Add mayonnaise, mustard, vinegar and a few liberal grindings of pepper and mix well until vegetables are all coated with the dressing.

3.   Add the garam masala and stir to coat vegetables.

4.   Add the oyster-sauce mixture, and continue to stir until the sauce is smooth and coats the vegetables.

5.   Add tomato paste and stir to coat vegetables.

6.   Coat vegetables, especially sliced potatoes and onions, with the vinaigrette.

7.   Combine remaining ingredients in bowl and mix until vegetables are evenly coated.

8.   Pour over carrots and toss to coat vegetables evenly.

9.   To serve, gently toss to coat vegetables with dressing.

10.   Toss lightly to coat vegetables with oil, sprinkle with salt and pepper and toss lightly again.
