61.   Stir in one cup of the warm milk mixture, then slowly stir this egg gloop back into the pan with rest of the sauce and stir well.

62.   Stir the milk mixture into the cornmeal mixture just until moistened.

63.   Stirring vigorously, add larger portion of milk mixture to caramelized mix in double boiler.

64.   Stir a small amount of the hot milk mixture into the egg yolks.

65.   Stir gelatin into hot milk mixture, and remove saucepan from heat.

66.   Stir mushrooms and milk mixture into grits, season to taste with salt and pepper, and pour into prepared dish.

67.   Stir the gelatin into the hot milk mixture, and remove the saucepan from heat.

68.   Strain the milk mixture into the egg mixture.

69.   Strain the thick milk mixture, and discard solids and seasoning ingredients.

70.   Then pour the egg mixture back into the milk mixture.
