21.   In a medium heatproof bowl, combine chocolate and butter and set over a pan of simmering water.

22.   In a small heatproof bowl set over a pan of simmering water, melt together chocolate and butter.

23.   In the top of a double boiler set over simmering water, heat the butter and chocolate together until the chocolate is almost completely melted.

24.   In the top of the double boiler set over simmering water, beat together the sugar, water and egg whites until soft peaks form.

25.   It reheats well in the microwave or in a small bowl set over a pan of simmering water.

26.   Just before serving, in a small bowl melt the chocolate in the milk in the microwave or in a double boiler over simmering water.

27.   Keep warm over a pan of simmering water until ready to serve.

28.   Melt butter and chocolate in a double boiler over simmering water.

29.   Melt butter and chocolate together in top of a double boiler over simmering water, whisking constantly.

30.   Melt white chocolate with the solid vegetable shortening in top of double boiler over simmering water.
