11.   Gather dough into a ball and turn out onto a lightly floured surface.

12.   Gather the dough into a ball and place in an oiled bowl at least twice the size of the dough ball, turning once to grease the top.

13.   Gather the dough with floured hands, then transfer to a lightly floured work surface.
