11.   Season the flesh with salt and pepper, sprinkle with the pecan mixture and the butter pieces, then place in the oven.

12.   To make pastry, sift dry ingredients together and cut in butter with a pastry blender or two knives until the butter pieces are the size of small peas.

13.   Turn the heat to low and gradually whisk in the butter pieces to make a smooth, creamy sauce.

14.   Using fingers, rub in the butter until the butter pieces are no larger than small peas.
