11.   Add spinach and water, stirring until spinach wilts and is bright green.

12.   Add julienned cabbage leaves, cook just until bright green, then drain.

13.   Add the coriander, lemon juice, mayonnaise and yogurt, and process until the greens are well blended and the mayonnaise is a bright green.

14.   Add the peas and broth and cook over high heat for several minutes, until the peas turn bright green and the sauce is somewhat reduced.
