1. Place lamb in a heavy baking pan. 2. Place lamb on rack in roasting pan. 3. Place lamb on top. 4. Place lamb on work surface, and season with salt and pepper. 5. Place the lamb atop the bed of potatoes and onions and return to the oven. 6. Place the lamb together with the onion halves, cut side down, in the baking dish and spoon some of the melted butter over the lamb. 7. Place lamb in roasting pan. 8. Place the lamb in the dish and transfer to the refrigerator. 9. Place the lamb, exposed bone in the air, on the upside-down plate. 10. Place lamb in bowl, turn to coat sides, and cover by placing sheet of plastic wrap directly on meat. |
