1. At this point, the mixture should be just about thick enough to coat the back of a spoon. 2. Add the butter and whisk until the sauce is emulsified and coats the back of a spoon. 3. Add the cream, and continue to reduce until mixture is thick enough to coat the back of a spoon. 4. Bring to a boil, reduce heat and simmer slowly for a few minutes until the sauce thickens and coats the back of a spoon. 5. Coat the back of the replacement tile with adhesive, then press it into place. 6. Cook mixture over medium heat, whisking constantly, until it is thick enough to coat the back of a spoon. 7. Cook over low heat, stirring slowly, until the custard has thickened enough to coat the back of the spoon. 8. Cook, stirring constantly, until custard is thick enough to coat the back of the spoon. 9. Continue to heat mixture until it is thick enough to coat the back of a spoon. 10. Cook over simmering water, stirring constantly until the mixture coats the back of a silver spoon. |
